Inspired by the hummus snack bowl that I had at 42 Raw in Copenhagen, I wanted to make a version of hummus using fresh herbs. This little bowl of goodness is perfect for hot summer days when you want something that’s quick and easy to throw together to snack on, it’s also great for barbecues or parties.
As I began making this batch of hummus I contemplated what else – expected or unexpected – I could add to it to give it a different flavour than my usual batch. I opened the fridge and saw a jar of gherkins. Unexpected? Yes. But why not? I added a couple, including some of the juice they were in. The result? Yum!
HUMMUS SNACK BOWL
for one
1 cup chickpeas, drained and rinsed
1 small gherkins
1 Tbsp juice from jar of gherkins
a bunch of fresh basil
pinch of salt and pepper
pinch of chili powder, optional
2-3 medium carrots, cut into sticks
1/2 cucumber, cut into sticks
1-2 stalks of celery, cut into smaller sticks
METHOD
Pop all the ingredients into a good food processor and blend on high until no lumps remain. Spoon a generous amount into a bowl and dip your carrot, celery and cucumber sticks into it. Enjoy!
