Vanilla sponge cake with vanilla buttercream frosting. Traditionally you'd sprinkle shredded coconut on top, but I sprinkled edible pink glitter on mine instead. 👌

This was my Midsummer cake this year. It took me three days to make because I made all the different layers from scratch: vanilla sponge (sliced in two layers), lemon curd, strawberry mousse, pink meringues (to decorate the top), and Italian meringue to pipe on top. (All vegan too!)

It was ALMOST a success. It tasted good, but that Italian meringue topping melted everywhere as soon as I took the ring off the cake. 😅 Oh well.

But first, I'm making pink croissants.

I used strawberry jam instead of the traditional apricot to glue the checkered layers together.

Also, don't waste the leftover edges of sponge cake and leftover marsipan! I used it to make what I call Battenballs (swipe for pic).

    I made croissants from scratch for the first time I made croissants from scratch for the first time ever and they are perfect! 🥐🥐🥐

It took three days but was so worth it. I'm definitely doing this again. I have so many ideas for different kinds I want to try, like what if I fill them with pistachio crème, or white chocolate, or cream cheese frosting? Ohh, and I can make them in different colors! Pink croissants? Um, yes.

Also, they're vegan!
