Cauliflower and Red onion Slaw // http://BananaBloom.com

My mom used to make this awesome combination of vegetables marinated in vinegar and oil. It’s one of those things that has stuck with me and I recreate my own combinations of “slaws” often. I could chow this stuff straight out of the mixing bowl.

I like to keep a box of my marinated vegetables in the fridge to add to whatever I’m eating. They’re a delicious addition to my salads and work great as a side with pretty much anything. This particular recipe is for a cauliflower and red onion mix.

RECIPE

1 head of cauliflower
1-2 red onions
4-5 Tbsp apple cider vinegar (or white wine vinegar)
Salt & Pepper to taste

METHOD
Attach the slicing or grating blade to your food processor. Peel and chop the vegetables into large chunks. Slice or grate them in the food processor then transfer to a mixing bowl. Add a couple of splashes of vinegar, season with salt and pepper and mix. Store in an airtight container in the fridge.
