Sometimes, neither tea nor coffee is what I’m craving, but I still want something warm to sip on while I write or to go with my snack. Sometimes that’s a matcha latte, other times, it’s a Rainbow Latte!

With all the fun superfood powders available now that naturally color your food in the most delicious looking shades of pink, blue, green, yellow… you name it! The possibilities for your rainbow latte really are endless.

For my rainbow latte I opted for purple and achieved the color by mixing pink and blue. The pink is pitaya powder and the blue is blue spirulina powder – the same I used to make my blue smoothie bowl! Of course, a pink latte or a  blue latte (as pictured above) are every bit as gorgeous, but have fun with it, mix and match powders and see what colors you get!

To make this purple latte, I heat and foam about 1-2 cups of unsweetened almond milk (because I want vegan milk, but obviously you can choose whatever milk you want – oat milk, soya milk, whatever floats your boat!).

In a jar, I add about 1 teaspoon of pitaya powder (for the pink color) and 1 teaspoon of blue spirulina powder. Next, add the heated milk, but try to not pour too much of the foam into the jar – you’ll add that last. Seal the jar with a lid and shake until the powders are dissolved and you’ve got the color you want. You can do this with only pink or only blue powder if you want a pink or blue latte. Remove the lid from the jar and add the foam to the top – done!

Sprinkle some cinnamon on top if you like.
