You’ll find a plethora of cookies at a classic Swedish Fika, but possibly my favorite is Dream cookies.

In Swedish we call them “Drömmar”, directly translated that’s “Dreams”. They’re aptly named if you ask me. They’re crunchy, super sweet, and have air pockets on the inside that contribute to that crunchiness. They’re also super quick and easy to make. Clearly, they’re a cookie you want in your baking repertoire.

The recipe I’m sharing below is for vegan dream cookies, they’re practically vegan to begin with anyway, just make sure you’re using vegan butter if you want yours to be vegan too.

Dream Cookies

Ingredients

1.7 oz (50g) butter (vegan)
1/2 cup + 2 Tbsp (1.5dl) sugar
0.5 Tbsp vanilla powder
3 Tbsp (0.5 dl) canola oil
0.5 teaspoon ammonium carbonate (hjortronsalt)
1 cup (2.25 dl) flour

Directions

  1. Preheat oven to 150C (302F)
  2. In a small bowl, add all your ingredients and pinch them together with your fingers until you have a dough.
  3. Roll into balls, and place on a baking sheet lined with parchment paper, give them some space as they’ll flatten out in the oven and spread out.
  4. Bake in the oven for 20 minutes. Allow to cool on the tray before transferring them to an airtight container to store.
